A Small Family Business with a Legacy of Craftsmanship We are a small family business based in the American West, with a deep commitment to quality and tradition. The company we have chosen to craft our woks traces its origins back over 400 years. They have received the official seal of the Qing Dynasty, are a Jiangsu time-honored brand, and have been inducted into Wuxi's intangible cultural heritage list. This rich heritage is evident in the exceptional craftsmanship of our cast iron woks.
Lightweight, Yet Durable Cast Iron Our flat-bottom cast iron wok is notably thinner and lighter than American-made cast iron skillets, weighing around 4 lbs 12oz, similar to a 2mm thick carbon steel wok. This is achieved through the Chinese traditional casting process, which creates a relatively thin yet strong wok. The superior heat retention of cast iron makes it an ideal material for wok cooking.
Premium Raw Materials for Exceptional Quality We have spared no expense in sourcing the finest raw materials for our woks. The removable American oak handle allows for easy oven seasoning. The high-quality grey iron, purple mud from Hui Mountain for the mold, rice husk ash from Lake Tai to strengthen the mold, and pinewood from Wuyi Mountain used in the mold release process all contribute to the exceptional quality of our products.
Protecting Your Investment To ensure the longevity of your cast iron wok, we recommend the following care instructions: 1) Clean the wok and wipe it down to remove all water immediately after use, then apply a light coat of oil. 2) Clean the wok with the included chain mail and warm water, rather than a soapy sponge. Soap can remove the seasoning, although a small amount is acceptable if necessary after a hard layer of seasoning has built up. 3) Never allow the wok to sit with liquid in it, as iron is highly reactive and will rust without sufficient seasoning.
Specifications and Inclusions Our cast iron wok has the following specifications: - Material: Cast iron - Flat bottom - Width: 14.25 inches - Depth: 4 inches - Weight: 4 lbs 12oz The wok comes pre-seasoned with vegetable oil and includes a glass lid and a 6x6 inch chain mail scrubber for cleaning.
Seasoning Your Wok for the First Time To season your new cast iron wok, follow these steps: 1. Wash: Clean the wok with warm water and soap using the included sponge. After this initial wash, always use the chain mail scrubber instead of a sponge. 2. Dry: Heat the wok on low-medium heat to evaporate any remaining water and open the iron pores. 3. Oil: Using seasoning wax or a high smoke point cooking oil, evenly coat the inside and outside of the wok with a paper towel, wiping away any excess. 4. Bake: With the wooden handle removed, place the wok upside down in a pre-heated 450-degree oven for one hour. Tip: Place a foil-lined pan below to catch any drips. 5. Repeat: Remove the wok from the oven and your first seasoning is complete. For an even thicker layer of seasoning, you can repeat this process two additional times. 6. Attach: Once cooled, attach the wooden handle by inserting it into the metal base and securing it with the included screw.
